A delicious sweet baked ricotta cheesecake recipe using your homemade Creamy Whole Milk Ricotta. It’s quick, easy and super delicious. The recipe is credit to Debbie, one of the most warm and wholesome people I have ever met.

Debbies Baked Ricotta Cheesecake Recipe

Ingredients

    Base
  • 1 cup flour.
  • ½ cup desiccated coconut.
  • ½ cup brown or raw sugar.
  • 125g butter melted.
  • Filling
  • Juice and zest of 1 small lemon.
  • 400g Whole Milk Ricotta.
  • ½ cup icing sugar.
  • 2 tsp. of vanilla bean paste.
  • 2 eggs.

Instructions

  1. Mix the base ingredients together and press into a greased tin.
  2. Bake at 160 degrees celsius for 20-25 minutes or until golden. Allow to cool slightly.
  3. Mix the filling ingredients until smooth, then pour over the base and bake at 160 degrees celsius for a further 20-25 minutes or until set.
  4. Allow to cool completely before cutting.
